Zucchini Lasagna

😜Need an extra serving of vegetables? 🍆🍠🍅 No problem! When you replace lasagna noodles with thinly sliced zucchini you create a low calorie 😍 low carb 😝 lasagna thats so flavorful 😄 GARFIELD 🙊 wouldn't even miss the PASTA! 😌
*👆Be sure to grill your zucchini slices to remove the access liquid!💧
((💁I actually made 2 Lasagnas from this recipe, by using smaller baking dishes. ✌That way i can freeze the second one for a later date when im too busy this summer to cook☺))
💚Zucchini Lasagna💚
🔸1 lb Ground Turkey 🔸3-4 Zucchini, Thin Cut (Using A Madlin Slicer)
🔸4 Cloves Of Garlic, Chopped
🔸1/2 Onion Chopped 🔸3 Cups Chopped Organic Tomatoes 🔸1/2 Cup Egg Plant
🔸1/2 Cup Mushrooms Chopped 🔸1/4 Cup Black Olives
🔸1 Large Egg 🔸2 Cups Cottage Cheese 🔸1/2 Cup Ricotta 🔸6 TBS Skim Mozzarella Cheese Shredded (For The Top)
🔸2 TBS Chopped Fresh Basil
🔸2 TBS Oregano 🔸2 TBS Marjoram 🔸Salt and Pepper To Taste 🔸1 Big Casserole Dish or 2 Smaller Ones
➡Add olive oil to the pan -- saute garlic with onions.
➡ Add Meat
➡ Add tomatoes, mushrooms, olives, diced and cleaned egg plant--basil, oregano, marjoram + salt and pepper 😁
➡Simmer on low for at least 30-40 minutes, covered.
Do not add extra water (Zucchini is watery enough!🙏)
➡Trickiest Part: Slice your zucchini into 1/8" thick slices (Be Gentle👀)
Lightly salt and set aside for 10 minutes -- the salt will help the zucchini dry out 👌
➡Afterwards blot the excess moisture with a paper towel
➡Grill the zucchini on each side until cooked
➡Place on paper towels to soak any excess moisture ➡In a bowl mix cottage cheese, ricotta and egg. ➡In a casserole dish (or two of them) spread zucchini on the bottom layer, meat sauce + cottage cheese mixture, repeat the process until all your ingredients are used up. ➡Top with sauce and mozzarella and cover with foil!
➡Bake at 365 for 45 Minutes 🔥
